If you’ve been reading my recipes for a while, you may notice that I’m always trying to think up a new salad recipe. This one has been my favorite lately. It’s so simple to throw together, plus it’s packed with tons of flavor. This just a traditional succotash recipe thrown into salad form. If you love a good ole Southern succotash, then you’ll definitely love this salad too.

Equipment You’ll Need

The equipment you’ll need for this salad is obviously a large salad bowl. You’ll need a skillet to fry your bacon with. I tagged my favorite cast iron below. You’ll also need a microwave. As for the frozen corn and beans, I just microwave them according to the instructions. I’m trying to not make this too complicated.

Ingredients You’ll Need

Spring Mix Greens:

I used about two cups of a spring mix.

Bacon:

You’ll need 3 to 4 slices of bacon. You can use any kind you’d like. You’re just going to chop it up to go on the salad.

Cherry Tomatoes:

I used about a handful of cherry tomatoes. I halved some of them.

Frozen Corn and Lima Beans:

You’ll need about a quarter cup each. I used the frozen that come in the bag.

Pimentos:

You’ll need about a tablespoon of pimentos. These will be by the pickles in a small jar.

Freshly Grated Parmesan Cheese:

I really thought about what cheese to go on this salad and honestly, parmesan worked the best in my opinion.

Sweet Onion Dressing:

For the sweet onion dressing, you need olive oil, apple cider vinegar, onion powder, and black pepper.

How to Make This Corn Succotash Salad with Sweet Onion Dressing

Step One:

In a large skillet, fry 3 to 4 pieces of chopped bacon slices. Remove and place on a paper towel once finished cooking.

Step two:

Cook about a half cup of frozen baby lima beans and frozen corn kernels each in the microwave. The bags should come with instructions. If not, place both on a plate with about a tablespoon or two of water and cover with a damp paper towel. Cook in the microwave for about 3 minutes.

Step three:

Add all the ingredients of the salad to a bowl and toss. Add all the dressing ingredients to a small bowl or mason jar and mix. Drizzle over salad. Serve and enjoy!

Ingredients

  • 1 tsp Coarse Black Pepper

Instructions
