Easy Skillet Enchiladas
These Easy Skillet Enchiladas are the perfect choice for when you need a delicious meal prepared in under 30 minutes. With quick weeknight dinners, I’m sure these enchiladas will be your new favorite!
The skillet method of cooking allows you to mix and simmer the enchilada beef and sauce in the same pan. You don’t even need a small saucepan—you can use any old skillet you have lying around.

Equipment You Will Need
The main thing you’ll need is your cast iron skillet. Cast iron is an ideal cooking material for the home cook. It retains heat well and is nonstick, allowing foods to be easily removed from the pan once cooked. No other pan heats evenly and handles like a cast iron skillet. I used my 10-inch square cast iron.



Ingredients You Will Need
Let’s get this party started with these cast iron enchiladas. Mexican food with southern flair that’s sure to become your favorite.
- 2 lbs Ground Beef
- 1/2 Onion, Chopped
- 1/2 Green Bell Pepper, Chopped
- 1 packet Taco Seasoning
- 1 8 oz block Cream Cheese
- 2 cups Salsa
- 2 cups Shredded Cheese
- 5-7 8-Inch Tortillas

How to Make Skillet Enchiladas
Step 1
Preheat your oven to 375 degrees. Add your ground beef chopped onion and bell pepper to your skillet. Sauté on high until meat is fully browned. Drain grease completely off.
Step 2
Return your skillet of drained beef back to the stove. Turn heat down to low. Mix in one packet of taco seasoning. Stir thoroughly then remove half of the meat from the skillet. Set aside. Add in your block of cream cheese. Mix your beef and cream cheese together completely then smooth it out with a spoon on top. Pour half of your salsa on top of that.
Step 3
Make your enchiladas by adding the set aside beef and shredded cheese to each tortilla. Roll them up and place them on top of the creamy salsa beef. Once all of them are in your skillet. Pour the other half of your salsa on top of them. Cover with shredded cheese. Bake for 15 or until cheese is bubbly. Serve hot and garnish with jalapenos, cilantro, more salsa or avocado. Enjoy!
