What are new potatoes?

Ok, so what are new potatoes? They are pretty much a baby “new” potato. You can buy baby yellow or red potatoes in most grocery stores. These tiny potatoes are so buttery textured and delicious. They are also very easy to cook and serve in tons of different ways.

Equipment You’ll Need

For this recipe, you’ll need a large stock pot. You’ll boil your potatoes and make your sauce in it. Then, you’ll also need a large colander, some measuring cups and something to stir it all with.

Ingredients You’ll Need

Yellow Baby Potatoes:

You’ll need about 3 pounds of yellow new or baby potatoes.

Butter & Flour:

You’ll start your cream sauce with a roux of melted butter and flour. I used a stick of salted butter and about a half cup of flour.

Heavy Cream:

You’ll need a cup of heavy cream.

Milk:

I used a cup and a half of milk. I felt like this was a good ratio of cream to milk.

Salt & Pepper:

All that I seasoned these with was a little salt and pepper. No particular amount. They don’t need any other seasonings.

How to Make These New Potatoes in Cream

step one:

Add your new potatoes to a large pot. Fill with water over the top of the potatoes then boil for about 25 to 30 minutes. You’ll want your potatoes to be tender but not falling apart. Pour into a large colander and set aside.

step two:

In the same pot, emptied, add your stick of butter on medium to low heat. Melt butter then sift in flour. Mix until a paste forms then add in your milk and heavy cream. Stir will then add in some salt and pepper and your potatoes.

step three:

Fold the potatoes in then cover for about 5 to 10 minutes. The cream should be thickened. Stir again and remove from heat. Serve and enjoy!
