What are Oven Roasted Corn Ribs?

So you’re probably wondering what corn ribs are? Basically, “corn ribs” are simply corn on the cobb that has been cut into quarters then roasted in the oven or grill. You’re probably wondering “why?” Why cut a cob into pieces just to eat it the same exact way?

I’ll tell you why. They are really freaking good. The roasting is so much more even than a traditional cob that is still in its natural, round state. They also cook fairly fast. To me, when you eat the rib, you also don’t get the kernels stuck in your teeth like you may normally would from biting into a cob.

How to Make Corn Ribs

The Equipment You’ll Need:

Oven

Sharp Kitchen Knife

Cutting Board

Baking Pan

The Ingredients You’ll Need:

THE CORN

Corn

Olive Oil

Paprika

Salt

Pepper

Garlic Powder

GARNISH

Ranch (I used Skinny Girl Ranch)

Crumbled Feta

Chopped Parsley Optional

The Instructions:

  1. Preheat oven to 375 degrees.
  2. Remove husk from corn. Cut the pointy ends off so that there is a straight across end. Use a large, and very sharp kitchen knife and place it at the middle of the newly straight and flat end of one of the corn husks. With the corn being closer to the widest end of the blade, slowly move down wards using your palms on the dull side of the knife. Be very slow, and careful during this step.
  3. Once corn is halved, place the flat side down, and repeat the process to cut it into quarters.
  4. Once the corn is cut, place core side down on a baking pan. Drizzle with olive and cover with seasonings. Mix corn around to get an even coating of oil and seasoning. Place in the oven for 15-20 minutes. You should see the tops starting to char, and they will start to curl.
  5. Take out of oven. You can then drizzle with ranch dressing, Feta or Cotija cheese, and parsley. Enjoy!

Tips For Cutting the Corn Ribs

Cutting these cobs into quarters can be somewhat dangerous if you aren’t careful. Follow these tips for making the cutting process go much smoother.

  1. Make sure that you are using a VERY sharp knife. You will be cutting through the very dense core of the cob. I used a large kitchen knife for this recipe. I always typically sharpen my knife before each time I make corn ribs. Using the widest part of the blade closest to the handle is the best practice.
  2. First, start in the middle of one of the tip ends of the corn. Place the corn towards the handle of the blade of the knife. This will give you more control over the knife while cutting. Firmly press down on the back side of the knife and the handle with one hand. Wiggle the knife from the back sides of the blade until it fully cuts in half.
  3. Place the cut side down then press down the middle of the half with the back side of the knife. Again, place it closer to the handle of knife on the blade.

Serving Size is for about ~5 pieces. These are so good as a side dish for a barbeque cookout.
