I love these crock pot Southern lima beans. They are so simple and packed full of flavor. Delicious and buttery with the savory flavor of ham packed into every bite. I like eating beans over rice with cornbread as a main meal, but you can always serve them as a side dish. Keep reading to see how I made these lima beans in the crockpot.
1-2lbsHam (You can use a leftover hambone or ham hocks or even thick cut spiral ham)
4-6cupsChicken Broth
4cupsWater
4tbspButter
1-2tspSalt
1tbspPepper
1tbspGarlic Powder
1tbspOnion Powder
1tspPaprka
1tbspSugar
Instructions
Empty all ingredients into a large crockpot. It may seem like a lot of broth and water but your beans will need and soak up a lot of liquid. Cook on high for at least 5 hours.
Once time is up, stir and add more broth or water if needed. Remove any ham bones or gristle. Serve as a side dish or over rice with some cornbread as a main. Enjoy!
Notes
What if beans are still hard?
Add more water or broth. Stir and cover for about 30 more minutes. It should only maybe be the beans on the top of the crockpot. Make sure those are on the bottom of the crockpot after stirring.
