Slow Cooker Short Ribs Vegetable Beef Soup
This slow cooker short ribs vegetable beef soup is just a new twist on a traditional comfort food. All you're going to do is slow cook all of your typical ingredients for a vegetable beef soup, but instead of beef tips, you'll use short ribs. I love short ribs in crock pots. They come out so tender and the flavor is 100% better. This is a perfect and easy crockpot meal that's full of flavor.

- 4 lbs Beef Short Ribs
- 2 cans Whole New Potatoes
- 1 can Whole Kernel Corn
- 1 can Stewed Italian Style Tomatoes
- 1 can Cut Green Beans
- 2 cups Baby Carrots
- 16 oz Brown Mushrooms
- 1 cup Red Wine
- 2 tsp Thyme
- 1 tsp Salt
- 2 tsp Black Pepper
- 32 oz Beef Broth
Add all of the ingredients to a large crockpot. Cook on high for 6-8 hours.
After time is up, remove bones from short ribs and shred meat with two forks. Serve with crackers or cornbread. Enjoy!
