Ham Wrapped Asparagus with Hollandaise Sauce
This ham wrapped asparagus with hollandaise sauce is the perfect item for Spring. I plan on making this for my Easter lunch. I love asparagus with hollandaise sauce, but this recipe puts a different twist on typical asparagus bundles. This are really light and fresh, and bring that perfect eggy vegetable side dish to your table.

- 2 bunches Fresh Asparagus
- 1/2 lb Thinly Sliced Honey Ham
- Salt
- Pepper
- Garlic Powder
Hollandaise Sauce
- 3 Eggs Yolks
- Juice of a Half a Lemon (Only use fresh lemon juice. Not a substitute for lemon juice)
- 1 tbsp Ground Mustard Seasoning
- 1 stick Unsalted Butter
- 1 tsp Cajun Seasoning
Preheat your oven to 350 degrees. Cut the bottom inch off of all of your asparagus stalks. Take about 4 at a time and wrap them with thin slices of ham. S
Lay them on your baking sheet lined with parchment paper and sprinkle with salt pepper and garlic powder. Bake your asparagus bundles for about 15 to 20 minutes.
While your asparagus is baking, add 3 egg yolks, the juice of half a lemon, and a tablespoon of ground mustard to a food processor or blender. While it's blending, add your stick of butter to a small pot on low heat on the stove.
Once butter is melted, turn off heat then add in your egg yolk mixture. Slowly stir, and it will thicken up. Add in Cajun seasonings and serve warm over your asparagus bundles. I like to garnish with chopped boiled eggs. Enjoy!
