Slow Cooker BBQ Brisket Sandwich

A BBQ brisket sandwich. Something that I love. Guilty pleasure. Comfort food. This one is so simple to make. I whipped up a simple homemade BBQ sauce and threw it in a crock pot with a small brisket. Let it slow cook for about 5 to 6 hours. I made the sandwich with a simple coleslaw, pickles and a brioche bun. You cannot beat this amazing sandwich, I'm telling you. Plus, it's so easy!

Ingredients
  

  • 8-10 Brioche Buns
  • 5+/- lb Brisket
  • Sharp Cheddar Cheese Slices
  • Hamburger Dill Pickle Slices
BBQ Sauce
  • 1 cup Ketchup
  • 1 tbsp Yellow Mustard
  • 1 tbsp Dijon Mustard
  • 1/2 cup Apple Cider Vinegar
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Soy Sauce
  • 1/4 cup Brown Sugar
  • 1 tbsp Garlic Powder
  • 1 tsp Salt
  • 2 tsp Black Pepper
Coleslaw
  • 16 oz Coleslaw Mix
  • 3 tbsp Mayonnaise
  • 1 tbsp Sour Cream
  • 1/4 cup Pickle Juice
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Black Pepper
  • 1 tbsp Cajun Seasonings

Instructions
 

  • Mix all the ingredients for you BBQ sauce together in a small bowl or mason jar. Add your brisket to a large crockpot, fat side up. Pour all of your BBQ sauce over the top.
  • Cook on high for at least 5 hours. Once it's finished, shred with forks. Before I shredded the meat, I removed some of the juice so it wouldn't be so soupy in the crockpot.
  • Mix all the ingredients together for your coleslaw together. Toast your buns. Assemble the sandwiches with cheese, brisket, coleslaw and pickles. Serve and enjoy!
