Stuffed Collard Greens

These stuffed collard greens. Just like stuffed cabbage rolls. These are big collard green leaves stuffed with a ground beef, rice and tomato sauce filling. These are so hearty and just a good one pot meal. If you like recipes with collard greens, this is it.

Ingredients
  

  • 1 lb Ground Beef
  • 1 cup White Rice
  • 1 Yellow Onion, Chopped
  • 15 +/- Collard Green Leaves
Tomato Sauce
  • 2 tbsp Butter
  • 2 tbsp Minced Garlic
  • 1 can Tomato Paste
  • 29 oz can Tomato Sauce with Italian Herbs
  • 15 oz can Petite Diced Tomatoes
  • 1 tbsp Hot Sauce
  • 1 tsp Salt
  • 1 tbsp Pepper
  • 2 tbsp Sugar
  • 1 tbsp Onion Powder
  • 1 tbsp Italian Seasonings

Instructions
 

  • Preheat your oven to 350 degrees. In a large skillet add in your ground beef. Cook until fully browned then drain off excess fat. Cook the cup of white rice.
  • Add in your diced onion and sauté on medium heat until onions are tender. At the same time in another pot, add your butter and minced garlic for your sauce. Sauté for several minutes until the sauce becomes fragrant then add the remaining sauce ingredients. Let it simmer.
  • Combine the ground beef and onions with the cooked rice then half of the tomato sauce, then transfer to another bowl. All the while, take your washed collard greens, stuff each one with about two tablespoons of the rice and meat mixture and place in the skillet.
  • Repeat this step until the skillet is full then pour the remainder of the sauce over the top. Cover and bake for about 30 minutes. Serve and enjoy!
