Remove husk from corn. Cut the pointy ends off so that there is a straight across end. Use a large, and very sharp kitchen knife and place it at the middle of the newly straight and flat end of one of the corn husks. With the corn being closer to the widest end of the blade, slowly move down wards using your palms on the dull side of the knife. Be very slow, and careful during this step.
Once corn is halved, place the flat side down, and repeat the process to cut it into quarters.
Once the corn is cut, place core side down on a baking pan. Drizzle with olive and cover with seasonings. Mix corn around to get an even coating of oil and seasoning. Place in the oven for 15-20 minutes. You should see the tops starting to char, and they will start to curl.
Take out of oven. You can then drizzle with ranch dressing, Feta or Cotija cheese, and parsley. Enjoy!
