Easy Hashbrown Casserole
This easy hashbrown casserole is a perfect comfort side dish. A similar rendition of my Granny's "funeral potatoes," this dish is so cheesy and delicious. All it consists of is a bag of frozen hashbrowns, sour cream, shredded cheese, cream of chicken, some bacon bits and seasonings. Can't beat it. This recipe is like "church potluck" good. - 1 26 oz Bag of Frozen Hashbrowns
- 1 pint Sour Cream
- 1 can Cream of Chicken Soup
- 1 8 oz Bag of Shredded Colby Jack Cheese
- 1.5 cups Bacon Bits
- 1/2 tbsp Cajun Seasoning
- Chives
Preheat your oven 350 degrees. In a large mixing bowl, add all of your ingredients; only adding half of the bag of cheese. Save the other half for later. Mix your ingredients entirely. Your hashbrowns will still be a little stiff and frozen.
Transfer your bowl of mixed ingredients to a greased 9x13 casserole dish. Top the casserole with the remainder of the bag of cheese. Cover with foil and bake for 45-55 or until bubbly. Once finished, top with additional cheese, chopped chives or more bacon bits. Serve warm and enjoy!
