Simple Pot Roast
This simple pot roast is an easy comfort food recipe. It's so foolproof and can be served with just about anything. All it takes is your a chuck roast and a little time. Make it in the actual pot or throw it in the crock pot. It's perfect for a weeknight or a big Sunday family dinner

- 2-4 lb Chuck Roast
- 1 tbsp Salt
- 1 tbsp Pepper
- 1 tbsp Garlic Powder
- 2 tbsp Olive Oil
- 1/4 cup Red Wine
- 1 Yellow Onion
- 2-3 Large Carrots
- 2-3 Bay Leaves
- 1-2 Sprigs of Thyme
- 1 packet Brown Gravy Mix
- 2-3 cups Broth
Traditional Pot
Preheat your oven to 350 degrees. Coat your roast in salt pepper, and garlic powder. Rub it in all over. In your large pot or Dutch oven, add a tablespoon of olive oil. Sear pot roast for about 30 seconds on each side. Remove the roast from the pot.
In the same pot, add in your sliced onion. Saute' it for several minutes until it becomes translucent. Add in your red wine and scrap the bottom of the pot with a spatula to deglaze it. You will see that the sear marks from the roast will come off of the bottom of the pot. Add in your carrots, roast, bay leaves, and thyme. Then add in your stock and brown gravy mix. Stir the mix into the broth with a spoon to remove any clumps.

Crockpot
Coat your roast in salt pepper, and garlic powder. Rub it in all over. In a large skillet, add a tablespoon of olive oil. Sear pot roast on high heat for about 30 seconds on each side. Remove the roast from the skillet and add to crockpot.
Add in onion, carrots, wine, broth, gravy mix and herbs to the crock pot. Cover and cook on high for 3-4 hours or low for 7-8 hours. Once roast is tender, shred it with a fork, and let it remain in crock pot until serving. Remove leaves and herb stems before serving. Serve alone or over rice and potatoes. Enjoy!
You could easily add in diced potatoes to this recipe. Simply add them in during the step you add your carrots, cover, and cook per directions.
I love the brown gravy mix in this recipe. I feel like it add more flavor. If your au jus is not liquid enough or too thick from the mix, just add in more broth.
