Loaded Mashed Potato Casserole

This loaded mashed potato casserole is the perfect all-American starchy side dish. I mean, who doesn't love dinner with mashed potatoes? This is a mix up of a loaded baked potato added into some homemade mashed potatoes loaded and baked with sour cream and cheeses. This is so decadent and rich and will serve as a perfect side dish for literally almost anything!

  • 13 x 9 Casserole Dish
  • Large Pot
  • Potato Peeler
  • Large Mixing Spoon
  • Electric Hand Mixer optional
  • Whisk
  • Potato Masher optional

Ingredients
  

  • 4-5 Large Potatoes
  • 3 tbsp Sour Cream
  • 1 cup Heavy Cream
  • 3 cups Shredded Cheese I used a mixed blend
  • 3-4 Green Onions, Chopped
  • 1/2 cup Bacon Bits
  • 2 tbsp Melted Butter
  • 1 tsp Salt
  • 2 tsp Pepper
  • 1 tbsp Garlic Powder

Instructions
 

  • Preheat your oven to 350 degrees. Peel and cube your potatoes. Wash them off very good for several minutes in a colander. Place them in a large pot and boil for about 15 minutes or until tender.
  • Place the tender potatoes in a large bowl. Mash with the end of a whisk or a potato masher. Add in the sour cream, heavy cream, 1/2 cup of shredded cheese, bacon bits, green onions, melted butter and spices. Mix well. For best results, use an electric hand mixer.
  • Pour the mixture into your casserole dish. Top with the remaining 2 and 1/2 cups of shredded cheese. Bake at 350 degrees for around 25-30 minutes or until cheese is melted and bubbly. Serve hot and enjoy!

Notes

-You could substitute the homemade mashed potatoes with any instant or readymade potatoes. 
-You could also use leftover mashed potatoes for this recipe.
