Beef Tips with Rice

I love this beef tips with rice recipe. It's so easy for me to just throw in a pot in the evening time. There's not a right or wrong way on how to cook beef tips and rice. You can make a homemade gravy or use a packet. This recipe is a little of both, and it tastes so delicious. Read along to see how I made this simple beef tips over rice.

Equipment

  • Large Pot or Dutch Oven
  • Medium Size Pot with Lid or Rice Cooker
  • Cutting Board

Ingredients
  

  • 3 lbs Chopped Beef Meat (Chuck, Rump, Sirloin or Stew Meat)
  • 2-3 tbsp Corn Starch
  • 8 oz Brown Mushrooms
  • 1 Yellow Onion
  • 1 tbsp Minced Garlic
  • 2 tbsp Butter
  • 1/4 cup Red Wine (optional)
  • 1 packet Brown Gravy Mix
  • 1 packet Ranch Seasoning
  • 1 packet Beef Onion Soup Mix
  • 32 oz Beef Broth
  • 1 tsp Salt
  • 1 tbsp Pepper
  • 2-3 Bay Leaves
  • 2 cups Rice
  • 4 cups Water

Instructions
 

  • Add your chopped onion, minced garlic and sliced mushrooms to a large pot or Dutch oven. Sauté on medium heat with two tablespoons of butter until onions are translucent and mushrooms are softer.
  • Coat your small cubes of beef in salt, pepper and cornstarch. Place them in the pot. They will start to sear and cook, and the veggies will also get a thick coating. Stir for several minutes until all meat seems to be totally browned. If you have red wine, add it to the post then scrap the seasonings off the bottom of the stock pan.
  • Add in your 3 packets of mixes. Stir them until they coat the meat and veggies. Slowly add in your beef broth. Then add your bay leaves. Keep on medium heat until the stew starts to bubble and thicken. Cover and reduce heat to lowest setting.
  • While your tips are simmering, add 4 cups of water and two cups of white rice to a pot. Bring water to a boil, cover and reduce heat to lowest setting. Do not remove lid. It will take around 20 minutes for rice to fully cook. Uncover stew, remove bay leaves and stems, and taste. See if it needs any salt or pepper and add accordingly. Serve over the rice. Enjoy!
