Berry Patriotic Ice Cream Pie

Looking for some patriotic Memorial Day or 4th of July desserts? This ice cream pie with berries is perfect for your holiday cookout. All the recipe consists of is a store-bought crust, ice cream, cream cheese, sugar and berries. Top it off with a little whipped cream and sprinkles to make it festive. Read along to see how to make one of my favorite red white and blue desserts for Memorial Day or July 4th.

Equipment

  • Food Processor
  • Spatula

Ingredients
  

  • 10" Pie Crust (I used a pecan crust, but you could also use a graham cracker crust)
  • 1 pint Vanilla Ice Cream
  • 8 oz Block of Cream Cheese
  • 1 cup Blue Berries
  • 1 cup Strawberries
  • 1 cup Sugar
  • Whipped Cream
  • Patriotic Sprinkles

Instructions
 

  • Take out your crust and set it on the counter. Place your strawberries, half a block of cream cheese, half of your ice cream pint and half a cup of sugar to your food processor. Beat until fully mixed. Add it to your pie crust then place in the freezer for at least 30 minutes to let set.
  • Remove the pie from the freezer and repeat the same process with the same ingredients, only with blueberries. Place it in the freezer for at least 2 hours so it will be firm. Remove and add whipped cream and sprinkles to the top. Serve and enjoy!

Notes

  • I made homemade whipped cream for the topping. Simply add 1.5 cups of heavy cream and 1 cup of sugar to your food processor and beat until firm. Place it in a piping bag and add to the top or simple spread it on.
