Summer Squash Chicken in Foil Packets

Looking for an easy summer dinner? These summer squash chicken in foil packets are one of my favorite healthy summer go-to's. All you do is place your chicken, squash, onion and some seasoning in some foil. Wrap it up, and let it bake. It's so simple and cleanup is a breeze. The chicken comes out so tender, and the flavors of all the veggies create the most delicious flavor. Read along to see how I make this baked chicken in foil in no time.

Equipment

  • Tin Foil
  • Baking Sheet
  • Kitchen Knife

Ingredients

  • 4 Chicken Breasts
  • 3 Yellow Squash
  • 3 Zucchini
  • 1 Yellow Onion
  • 1/2 cup Olive Oil
Seasonings
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Italian Seasonings
  • 1/2 tsp Lemon Pepper

Instructions

  • Preheat your oven to 375 degrees. Cut your breasts in half down the middle and remove any excess fat off of them. Tear off 4 pieces of foil, each about a foot long. Add the pieces of chicken to the center of each piece of foil and manipulate the foil into a bowl-like shape.
  • Slice your squash into little half inch slices and divide them up amongst your four foils. Do the same with your onion. Drizzle about 1-2 tablespoons of olive oil in each packet. Mix all of your seasonings together in a bowl then add 1-2 teaspoons into each packet.
  • You'll then fold in two side together to the center. Then take the other two sides and roll them up until it makes a bag-like shape. Try not to let it have any holes in it so the steam will stay inside. Bake at 375 for at least an hour or until the chicken reaches 165 internally. Serve right out of the packet and enjoy!
