Easy Bisquick Strawberry Shortcake
Ok. These bisquick strawberry shortcake biscuits are the best thing ever. The tangy and sweet strawberries and homemade whipped cream placed between a fluffy, pancake-y biscuit is what dreams are made of. This is the ultimate old timey summer dessert. I remember my mom making a similar recipe growing up. Keep reading to see how I made these strawberry shortcake biscuits.

Strawberries
- 2 lbs Fresh Strawberries
- 1 cup Granulated Sugar
- 1 tsp Vanilla Extract
- 1 tbsp Lemon Juice
Biscuits
- 2 1/4 cups Bisquick
- 2/3 cup Milk
- 3 tbsp Melted Butter
Whipped Cream
- 1 1/2 cup Heavy Whipping Cream
- 1 cup Granulated Sugar
Preheat your oven to 425 degrees. Slice all of your strawberries. Place them in a large bowl. Add in your sugar, vanilla and lemon and stir. Place in the refrigerator to keep cool.
In a separate bowl, add in your bisquick, milk, and melted butter. Mix well until a dough forms. Use a cookie scoop or a tablespoon to scoop out 6 biscuits on to an ungreased non-stick pan. Place in the oven and bake for 9-10 minutes until biscuits are golden brown.
Using a food processor or a bowl and hand mixer, beat whipped cream and one cup of sugar on high until thickened. Cut biscuit in half and stuff with ample strawberries and whipped cream. Enjoy!
