Mini Pecan Pies
I love these mini pecan pies. These are seriously the perfect little gooey bite. They are just a typical Southern pecan pie filling put into mini phyllo dough crust bites. Before baking, I topped them with more crushed pecans and brown sugar. Bake and then let them set and cool. These are the most addictive desserts and perfect twist on a classic southern favorite!

- 60 Phyllo Dough Mini Shells
- 1 cup Corn Syrup
- 1 cup Brown Sugar
- 1 cup Crushed Pecans
- 3 Large Eggs
- 1 tsp Vanilla
- 4 tbsp Melted Butter
Toppings
- Crushed Pecans
- Brown Sugar
Preheat your oven to 325 degrees.
In a large bowl, combine corn syrup, eggs, brown sugar, vanilla, and melted butter. Mix well then fold in one cup of crush pecans.
Align your phyllo dough cups on parchment paper lined trays. Fill each cup with pecan filling. I used a cookie scoop to fill them.
Once all cups are filling, sprinkle the top of each of them with more crushed pecans and brown sugar. Bake at 325 for around 20 minutes or until each pie looks bubbly.
Let them set and fully cool. Serve and enjoy!
