These mini pecan pies are seriously the best. They really aren’t that hard to make at all. You’ll just mix up your filling, fill up the cups, sprinkle them with more pecans and brown sugar and bake. They are that simple, and perfect for a crowd.

I’ll be honest…I’m not the biggest dessert person. I don’t know why, but I never have been. If you have just the tiniest, sweet tooth, these are what you need. However, I’ll warn you…you may not be able to eat just one.

Equipment You’ll Need

All you’ll basically need for this recipe is two large baking sheets and some parchment paper. I love these sheets. They are just easier to use than the roll. You’ll also need some measuring cups and a large mixing bowl.

Ingredients You’ll Need

Phyllo Dough Mini Shells:

This filling recipe makes about 60 shells worth. I think they come in 15 to a box, so you may need about 5 boxes.

Corn Syrup:

I used a cup of light corn syrup.

Brown Sugar

You’ll need a cup of brown sugar. I didn’t pack it. I just loosely measured. Then you’ll also need some more to sprinkle on top of each mini pie.

Crushed Pecans:

I used a cup of crushed pecans for the filling then I also sprinkled more on top of each pie.

Eggs:

You’ll need 3 large eggs, beaten.

Vanilla:

I used about a teaspoon of vanilla.

Melted Butter:

You’ll need about a half of a stick of butter melted.

How to Make Mini Pecan Pies

Step One:

Preheat your oven to 325 degrees.

Step two:

In a large bowl, combine corn syrup, eggs, brown sugar, vanilla, and melted butter. Mix well then fold in one cup of crush pecans.

Step three:

Align your phyllo dough cups on parchment paper lined trays. Fill each cup with pecan filling. I used a cookie scoop to fill them.

Step four:

Once all cups are filling, sprinkle the top of each of them with more crushed pecans and brown sugar. Bake at 325 for around 20 minutes or until each pie looks bubbly.

Step five:

Let them set and fully cool. Serve and enjoy!
