Simple Breakfast Hash

I love this simple breakfast skillet. It's a one-pot, perfect meal for any time of the day. You'll sauté some sausage, onions, bell peppers and potatoes until tender. Top it off with some eggs, let them cook, then serve! It's so simple and takes less than 30 minutes to make!

Equipment

  • Large Skillet with a Lid or Something to Cover it With
  • Kitchen Knife
  • Cutting Board
  • Spatula

Ingredients
  

  • 1 lb Ground Breakfast Sausage
  • 1 Yellow Onion, Chopped
  • 1 Green Bell Pepper, Chopped
  • 1- 1 1/2 lbs Mini Gold Potatoes, Diced
  • 1 can Rotel Tomatoes with Green Chiles
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 7-8 Large Eggs

Instructions
 

  • Add your ground sausage to a large skillet. Sauté on medium to high heat until meat is fully browned.
  • Chop onion and bell pepper and add them to the skillet. Dice potatoes and add them to skillet. Drain and add in can of Rotel tomatoes. Finish off with all the seasonings, stir, and cover.
  • Let skillet simmer on medium to low heat for about 6-8 minutes. Potatoes should start to get tender.
  • Make about 7-8 holes in the hash. Crack an egg in each hole then cover again. Let cook for 2-3 minutes until eggs are cooked. Serve and enjoy!
