Biscuits and Hot Pimento Cheese

This biscuits and hot pimento cheese dip. Two of my favorite things combined. These are my favorite cat head biscuits rolled into smaller rounds and my old fashioned pimento cheese in the center of them topped with pepper jelly and baked in a cast iron skillet. The cheese comes out so gooey and pairs perfect with the savory biscuits. This is so perfect for brunch or seriously any time of day.

  • 2 Large Mixing Bowls
  • 10-Inch Cast Iron Skillet
  • Measuring Cups

Ingredients
  

Pimento Cheese
  • 8 oz Shredded Cheddar Cheese
  • 8 oz Swiss Cheese
  • 3 tbsp Mayonnaise
  • 4 oz Jar of Pimentos
  • 1 tsp Sugar
Biscuits
  • 2 cups Flour
  • 1/4 tsp Baking Soda
  • 2 tbsp Crisco or Shortening
  • 1 cup Buttermilk
Topping
  • 2 tbsp Hot Pepper Jelly
  • Green Onions

Instructions
 

  • Preheat your oven to 350 degrees. Add your cheeses, mayonnaise, sugar and 3/4 of the jar of pimentos to a food processor. Pulse until all mixed together smoothly. Add to a bowl then fold in the remainder of the whole pimentos. Set aside.
  • In a separate mixing bowl, combine the ingredients to the biscuits. I use my hands to really mix them together well. Once a sticky dough is made, form them into golf ball sized biscuits and line the edge of a skillet or pie dish. Line the biscuits around the perimeter of the dish until dough is gone.
  • Add the pimento cheese to the center of the pan. All of the cheese may not fit. Top with pepper jelly and bake for around 20 minutes. Biscuits will be golden brown and cheese bubbly. Serve and enjoy!
