I really have an obsession with pimento cheese dip. I don’t know why I love it so much, but I do. For this recipe, I put in the center of my favorite biscuits made tinier and then topped the pimento cheese dip with pepper jelly then baked it all together. This came out so perfect. The biscuits just come apart and dip perfectly in the bubbly cheese. I made this for a dinner appetizer, but my friend, Pam, told me she thinks it’d be great for brunch too. I completely agree!

Equipment You’ll Need

For this hot pimento cheese dip recipe, you’ll need a food processor and a couple of large mixing bowls. You’ll also need a cast iron skillet. I used a 10-inch square, but you can use round or honestly just whatever you have.

Ingredients You’ll Need

Cheeses:

You’ll need 8 ounces of both cheddar and Swiss cheese. I love using Swiss for my pimento cheese. It adds the perfect sweetness.

Mayonnaise:

You’ll need three tablespoons of mayonnaise.

Pimentos:

You’ll need a little four-ounce jar of diced pimentos.

Sugar:

You’ll need a teaspoon of sugar for the pimento cheese.

Flour:

And for the biscuits, you’ll need two cups of flour.

Baking Soda:

You’ll need a quarter of a teaspoon of baking soda.

Shortening:

You need two tablespoons of Crisco.

Buttermilk:

For the biscuits, you’ll need one cup of buttermilk.

Hot Pepper Jelly:

You need a new tablespoons of hot pepper jelly to top the pimento cheese with before baking.

How to Make These Biscuits and Hot Pimento Cheese Dip

Step One:

Preheat your oven to 350 degrees. Add your cheeses, mayonnaise, sugar and 3/4 of the jar of pimentos to a food processor. Pulse until all mixed together smoothly. Add to a bowl then fold in the remainder of the whole pimentos. Set aside.

Step two:

In a separate mixing bowl, combine the ingredients to the biscuits. I use my hands to really mix them together well. Once a sticky dough is made, form them into golf ball sized biscuits and line the edge of a skillet or pie dish. Line the biscuits around the perimeter of the dish until dough is gone.

Step three:

Add the pimento cheese to the center of the pan. All of the cheese may not fit. Top with pepper jelly and bake for around 20 minutes. Biscuits will be golden brown and cheese bubbly. Serve and enjoy!
