Cast Iron Skillet Chicken Breast Bites with Mushrooms and Veggie Rice

Ok. This cast iron skillet chicken breast bites with mushrooms and veggie rice recipe. The perfect simple, and quick dinner. These are just some simple cast iron skillet chicken breasts cut into cubes then sauteed with some seasonings, soy and Worcestershire sauce. Do the same with the mushroom and all the while be cooking your rice with a can of veg-all and chicken broth. Add it all back to the skillet and let the rice soak up that mushroom and chicken flavor. This recipe is so good and takes less than thirty minutes to make.

Equipment

  • Large Skillet

  • Pot with Lid or Rice Cooker

Ingredients
  

  • 3 large Chicken Breasts
  • 16 oz Whole Brown Mushrooms
  • 2 tbsp Soy Sauce
  • 2 tbsp Worcestershire Sauce
Chicken Seasonings
  • Salt
  • Pepper
  • Garlic Powder
  • Onion Powder
  • Paprika
  • Brown Sugar
Veggie Rice
  • 1 cup White Rice
  • 1 14 oz Can of Mixed Vegetables
  • 2 cups Chicken Broth
  • 1 tbsp Chicken Bouillon

Instructions
 

  • In a pot or a rice cooker, add all the ingredients for your veggie rice. Cover, bring to a boil and reduce heat until rice is cooked. If you have a rice cooker, add all the ingredients then turn on the cooker until it's ready.
  • Heat a large skillet to medium to high heat. Cut up chicken breasts and mushrooms. Season the chicken with a small amount of each of the chicken seasonings on each side.
  • Add the chicken to the skillet. Add in the soy and Worcestershire sauce to the skillet. Sauté until chicken is fully cooked tow 165 degrees.
  • Remove chicken from the skillet and add in the mushrooms into the chicken seasonings in the pan. Cook until tender. Add chicken and rice to skillet. Saute for a few minutes to let all the flavors come together. Serve and enjoy!
