This is the simplest of the chicken skillet recipes. It’s just some cubed up chicken breasts and mushrooms cooked in a simple mix of seasonings and sauces. While I was cooking my chicken, I used a rice cooker to cook my rice. I used a cup of white rice, a can of diced mixed vegetables, some chicken broth and chicken bouillon. Not going to lie, the veggie rice makes this dish. However, it’s all good for a simple weeknight meal.

Equipment You’ll Need

I used my favorite Staub cast-iron braiser for this recipe. You can use any skillet you have to make your chicken and mushrooms. I actually used a rice cooker to make my rice. If you don’t have one, that’s totally fine. You can just use a pot with a lid. However, I think that the rice cooker is a super underrated kitchen appliance!

Ingredients You’ll Need

Chicken Breasts:

I used 3 large chicken breasts and cut them into cubes.

Brown Mushrooms:

I used about 16 ounces of whole brown mushrooms. I just sliced them in half.

Worcestershire and Soy Sauce:

I used a few tablespoons each of Worcestershire sauce and soy sauce. I love the way this flavored the chicken then add in with the rice.

Seasonings:

For seasonings, I used salt, pepper, garlic and onion powders, paprika and a little bit of brown sugar to season my chicken with.

White Rice:

I used a cup of white rice.

Can of Mixed Vegetables:

You’ll need a 14-ounce can of mixed vegetables. You can empty the can along with the juice into the rice cooker or pot. Draining is unnecessary.

Chicken Broth:

You’ll need two cups of chicken broth to cook your rice in. This is the substitute for water.

Chicken Bouillon:

I add in about a tablespoon of chicken bouillon powder to my broth before cooking the rice. This just adds a little more flavor to the rice.

How to Make Cast Iron Skillet Chicken Breast Bites with Mushrooms and Veggie Rice

Step One:

In a pot or a rice cooker, add all the ingredients for your veggie rice. Cover, bring to a boil and reduce heat until rice is cooked. If you have a rice cooker, add all the ingredients then turn on the cooker until it’s ready.

Step two:

Heat a large skillet to medium to high heat. Cut up chicken breasts and mushrooms. Season the chicken with a small amount of each of the chicken seasonings on each side.

Step three:

Add the chicken to the skillet. Add in the soy and Worcestershire sauce to the skillet. Sauté until chicken is fully cooked tow 165 degrees.

Step four:

Remove chicken from the skillet and add in the mushrooms into the chicken seasonings in the pan. Cook until tender. Add chicken and rice to skillet. Sauté for a few minutes to let all the flavors come together. Serve and enjoy!
