Ham and Red Eye Gravy
I love this country ham and red eye gravy. This is recipe where you use fatty slices of ham, cook them down to render the fat, then pout a cup of coffee in the skillet and a few seasonings to make a dark and rich gravy. This is a classic southern recipe and it's perfect when you're looking for recipes with leftover ham.

- 12-16 oz Country Ham (or leftover ham)
- 1 tbsp Butter
- 10 oz Brewed Coffee
- 1 tbsp Brown Sugar
- 1 tbsp Cajun Seasonings
Add ham and butter to a large skillet. Sauté until ham is nicely cooked and browned.
Remove ham from the skillet and add in coffee. It will start to start to thicken. Add in your sugar and seasonings. A lot of people don't add in the seasonings, but I feel like it cuts the harsh coffee flavor.
Return the ham back to the gravy. Serve over grits, eggs or side of your choice. Enjoy!
