We are big breakfast food people. Allen loves breakfast for supper. Who wouldn’t? Look at that plate. So hearty and filling. Yum. Anyway, this red-eye gravy is so simple to make. You can buy a country ham steak, or you can use leftover ham. I added in some butter for more fat and flavor (as if it needs it). Then, I served it over grits with some fried eggs, toast and slicing tomatoes. It was so delish. You can also serve the ham and gravy over mashed potatoes or rice.

Equipment You’ll Need

All you need for this recipe is a skillet and some tongs. Maybe a measuring cup for your coffee. Oh, and maybe a coffee pot…? Anyway, the only two things you need to actually assemble the recipe are a skillet and some tongs. Super simple and won’t dirty up the kitchen.

Ingredients You’ll Need

Ham:

I used about 12-16 ounces of ham. You can use country ham from the grocery store. However, you can do like me and use leftover holiday ham.

Butter:

I added in the tablespoon of butter. Since I used the spiral ham, I felt like this mixed with the ham fat better, and the ham didn’t dry out.

Brewed Coffee:

You’ll need 10 ounces of brewed coffee.

Seasonings:

Some folks seasoning their red eye gravy recipe, but I couldn’t help it. I added in brown sugar and Cajun seasonings.

How to Make Red Eye Gravy

Step One:

Add ham and butter to a large skillet. Sauté until ham is nicely cooked and browned.

Step two:

Remove ham from the skillet and add in coffee. It will start to start to thicken. Add in your sugar and seasonings. A lot of people don’t add in the seasonings, but I feel like it cuts the harsh coffee flavor.

Step three:

Return the ham back to the gravy. Serve over grits, eggs or side of your choice. Enjoy!
