Simple Roasted Pimento Cheese Pizza

This not so typical recipe is the perfect southern twist on a traditional pizza pie. This simple roasted pimento cheese pizza is easy, doesn’t cause a mess, and delicious. Each bit is so savory yet has a hint of sweetness that will melt in your mouth. I opted for a traditional crust type for this pizza. They fluffy bite of the crust compliments the richness of the pimento cheese so so well. Please read along to see how I made this amazingly simple southern inspired pizza.

Ingredients
  

  • 1 Refrigerated Pizza Crust Dough
  • 1 tbsp Olive Oil
  • 1 4 oz Jar of Pimentos
  • 1 14 oz Bag of Mild Cheddar Cheese
  • 3 tbsp Mayonaisse
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Sugar Sweetener (I used Splenda)
  • 1 tsp Onion Powder
  • 1/4 tsp Smoked Paprika
  • Desired Toppings (Optional: I used Tomatoes and Mushrooms)
  • Desired Garnish (Optional: I used Spinach and Pickled Onions)

Instructions
 

  • Preheat oven to 400. Add cheese, mayo, drained pimentos, and seasonings to a bowl. Mix thoroughly.
  • Place a sheet of parchment paper on top of the pizza pan. Roll pizza crust onto parchment paper. Press dough into desired shape and size. I curved my edges inward to create an oval shaped pizza. Drizzle dough with olive oil then poke holes all over the dough with a fork.
  • Spread pimento cheese mixture evenly onto the dough, leaving about a two-inch space from the edges. Then, roll the edges inward. Then add your desired toppings. I used cherry tomatoes, Roma tomatoes, and mushrooms.
  • Bake at 400 degrees for 12-14 minutes. The cheese will be fully melted and keep an eye on the crust edges. They will turn golden when the pizza is ready. Remove from oven and garnish as desired. I used spinach and pickled red onions. Enjoy!
