Simple Roasted Pimento Cheese Pizza
This not so typical recipe is the perfect southern twist on a traditional pizza pie. This simple roasted pimento cheese pizza is easy, doesn’t cause a mess, and delicious. Each bit is so savory yet has a hint of sweetness that will melt in your mouth. I opted for a traditional crust type for this pizza. They fluffy bite of the crust compliments the richness of the pimento cheese so so well. Please read along to see how I made this amazingly simple southern inspired pizza.

What You Will Need for This Recipe
Not only is this pizza super easy to make, but it also really doesn’t require a lot of equipment. All you’ll need is some parchment paper, a pizza pan, a mixing bowl and spoon, and a fork.

Ingredients You Will Need for This Recipe
Pizza Crust Dough: I just used the Pilsbury refrigerated brand. No need to unthaw!
Mild Cheddar Cheese: I like using mild cheddar for pimento cheese. I feel like it’s not as a robust flavor and compliment the mayonnaise well.
Mayonnaise: Delicious binder of choice?
Pimentos: The traditional southern staple. Pimento cheese reminds me of my Grandparents
Toppings of Your Choice: I used cherry tomatoes, Roma tomatoes, and mushrooms. You don’t have to have toppings at all. This just adds a little more flavor and texture.
Garnish of Your Choice: Again, you don’t have to have a garnish. The pizza is delicious on its own. However, I added pickled red onion, and spinach. I love how colorful the pizza turned out, and it also just add a little more of a bite to each piece.

Step by Step on How to Make This Simple Roasted Pimento Cheese Pizza
Like I said earlier, this pizza is so quick and easy to make. I actually make it on my lunch break. I love simple, yet delicious recipes that don’t take forever to create, and cleanup is a breeze!
Step 1
Preheat oven to 400. Add cheese, mayo, drained pimentos, and seasonings to a bowl. Mix thoroughly.
Step 2
Place a sheet of parchment paper on top of the pizza pan. Roll pizza crust onto parchment paper. Press dough into desired shape and size. I curved my edges inward to create an oval shaped pizza. Drizzle dough with olive oil then poke holes all over the dough with a fork.

Step 3
Spread pimento cheese mixture evenly onto the dough, leaving about a two-inch space from the edges. Then, roll the edges inward. Then add your desired toppings. I used cherry tomatoes, Roma tomatoes, and mushrooms.
Step 4
Bake at 400 degrees for 12-14 minutes. The cheese will be fully melted and keep an eye on the crust edges. They will turn golden when the pizza is ready. Remove from oven and garnish as desired. I used spinach and pickled red onions. Enjoy!
