Squash Casserole with Ritz Crackers

- 4-5 Large Yellow Squash
- 1 Yellow Onion
- 2 tbsp Butter
- 3/4 cup Sour Cream
- 1/2 cup Shredded Parmesan Cheese
- 3/4 cup Shredded Cheddar Blend (I used Colby Jack)
- 1 tsp Salt
- 1 tbsp Pepper
- 1 tbsp Sugar
- 1 tbsp Garlic Powder
- 1 tsp Thyme
Topping
- 1/2 Stick Butter
- 1 sleeve Ritz Crackers
Preheat your oven to 350 degrees. Chop and dice your onion and place it into your large pot with two tablespoons of butter. Slice your yellow squash into 1/2-inch slices. Once your onion starts to look translucent, add in your squash slices. Sauté them until they start to become tender, but not overcooking them. Remove from heat.
In a separate bowl, add sour cream, cheeses and seasonings. Mix thoroughly then fold in your squash and onions. Add to a greased baking dish.
Add a half of stick of butter to a microwave-safe bowl, and heat in the microwave for 30 seconds. Before opening your sleeve of crackers, crush them with a meat tenderizer. Open and sprinkle your crushed Ritz crackers over the top of the dish. Then, pour the melted butter over the top of the crackers. Bake for 25 minutes until crackers are golden. Serve and enjoy!
