Equipment You Will Need

There’s not a lot to making this yellow squash casserole. I’m not sure why, but I am so partial to oval casserole dishes. I love my ones from Staub I’ve linked below. Then I also used my 5.5 quart Dutch oven to sauté the onions and squash. I felt like it was plenty big enough. Then, you’ll need some of the usuals such as measuring cups, mixing bowls, etc.




Ingredients You Will Need

Yellow Squash:

I used 4-5 yellow squash. The summer time is the best time to buy squash, because it’s in season and so fresh. Most grocery stores should have it, but I like to get it from local farmers markets.

Yellow Onion:

I used a whole yellow onion. I diced it up and sauteed it before adding in the squash.

Sour Cream:

I used sour cream as the creamy base. It turned out perfect mixed in with the cheese. I liked using the sour cream versus a cream cheese or mayo. It made the taste and texture perfect.

Cheeses:

I used a combo of parmesan and Colby Jack. I felt like the parmesan added a rich and sharpness, and the Colby Jack was better than just a sharp and bold cheddar.

Seasonings:

For seasonings, I used salt, pepper, sugar, garlic powder, and thyme. I always use the first four then the thyme added some earthiness.

Ritz Topping:

The Ritz crackers along with butter makes for the most delicious and amazing topping. This topping is essential!!

How to Make Squash Casserole

Step one

Preheat your oven to 350 degrees. Chop and dice your onion and place it into your large pot with two tablespoons of butter. Slice your yellow squash into 1/2-inch slices. Once your onion starts to look translucent, add in your squash slices. Sauté them until they start to become tender, but not overcooking them. Remove from heat.

Step two

In a separate bowl, add sour cream, cheeses and seasonings. Mix thoroughly then fold in your squash and onions. Add to a greased baking dish.

Step three

Add a half of stick of butter to a microwave-safe bowl, and heat in the microwave for 30 seconds. Before opening your sleeve of crackers, crush them with a meat tenderizer. Open and sprinkle your crushed Ritz crackers over the top of the dish. Then, pour the melted butter over the top of the crackers. Bake for 25 minutes until crackers are golden. Serve and enjoy!
