Butter and Herb Scalloped Sweet Potatoes

These butter and herb scalloped sweet potatoes are the perfect side dish to add to any occasion. It’s thinly sliced sweet potatoes baked to perfection in a thick creamy, buttery sauce with herbs. These sweet potatoes are so tender and rich, probably because they are swimming in butter and heavy cream. Disclaimer… this is not a recipe for those on a diet! These scalloped sweet potatoes are what dreams are made of. Really! What couldn’t be this good when this much butter is involved. You’ll melt a whopping stick and a half of butter with some fresh thyme and minced garlic. Then, add in some sugar, salt and heavy cream. This is the dreamiest cream sauce for your potatoes to baste in. This is great for Thanksgiving or Christmas lunch or just Sunday dinner…or even a regular night at home.
Equipment You’ll Need
You’ll need about a 9-inch skillet or baking dish for this recipe. You’ll also need a vegetable peeler and a small skillet to melt your butter mixture with.
Ingredients You’ll Need
Sweet Potatoes:
You’ll need 4-5 large sweet potatoes. You’ll peel off the skin and slice them into about 1/4 inch thick slices. If you have a mandolin, feel free to use it.
Butter:
Yes. Lots of butter here. You can use salted or unsalted.
Heavy Cream:
This will add a creamy and sweet hint to the mix. You could use half and half but what’s the point when you’re already using this much butter…haha
Herbs and Seasonings:
I used some fresh thyme, minced garlic, sugar and salt.
How to Make Scalloped Sweet Potatoes
step one:
Preheat your oven to 375 degrees. Peel 4 to 5 large sweet potatoes with a vegetable peeler. Slice each sweet potato into 1/4-inch-thick slices. Layer in a skillet or casserole dish.
step two:
In a small skillet, combine butter, minced garlic, thyme, sugar, and salt. Melt completely and pour over the top of your potatoes. Bake for 35-40 minutes or until bubbly. Serve and enjoy!
