Cajun Creamy Orzo with Sausage and Crawfish Tails

This Cajun creamy orzo recipe. It’s so delicious. It’s a spicy tomato base with crawfish tails. Add your orzo with some broth and let it all cook until your pasta is nice and tender. Fold in heavy cream, parmesan and browned smoked sausage. This one-pot meal is so simple and delicious and takes less than 30 to make.
Ok. What is Orzo?
Orzo. What is orzo? It’s just literally pasta rice. Little slivers of pasta that’s shaped just like rice. Nothing foreign. Nothing exotic. Just pasta rice. I love it. You can’t beat this Cajun orzo. Really. It’s got the spicy kick. It’s got the protein and it’s got the sweetness from the creamy. It a perfect one-pot, quick dish.
Equipment You’ll Need
For this recipe, I used my favorite Staub skillet. I love this one so much, because it comes with a clear lid. You’ll need a skillet with a lid! Then, I used a spatula, a measuring cup, and a knife to chop everything up with.
Ingredients You’ll Need
Smoked Sausage:
You’ll need about 14 ounces of smoked sausage. You can also use andouille if you prefer.
Yellow Onion and Celery:
You’ll chop one yellow onion and a stalk of celery for the base. These just give them some good flavor and texture.
Rotel Tomatoes with Green Chiles:
I use this way too much, but you can’t beat the flavor.
Crawfish Tail Meat:
You’ll need a pound of crawfish tail meat. You can buy it in the freezer section of your grocery store.
Chicken Broth:
This will cook the orzo pasta down and give it better depth and flavor than just water.
Orzo Pasta:
You’ll need a cup of dry orzo.
Heavy Cream:
You’ll need a cup of heavy cream.
Parmesan Cheese:
You’ll need about a half cup of shredded parmesan cheese.
Spices and Seasonings:
As for seasonings, you’ll need Cajun seasonings, hot sauce, garlic and onion powders, pepper, and sugar.
How to Make This Cajun Creamy Orzo Recipe
step One:
In a large skillet, brown sliced sausage pieces until they have a nice char then remove from the skillet. Set aside.
step two:
In the same skillet, add two tablespoons of butter and your chopped celery and onion. Sauté until they start to look cooked and translucent. Add your drained can of Rotel tomatoes, crawfish tail meat and all your spices and seasonings. Sauté on medium heat for a few minutes.
step three:
Add your orzo and the chicken broth to the skillet. Let it come to a boil, then reduce heat to low and cover. Cook for about 15 to 20 minutes or until orzo is cooked and tender.
step four:
Remove lid and stir in your heavy cream and parmesan cheese. Lastly, fold in your sausage. Serve and enjoy!
