Dirty Rice Stuffed Peppers with Cheese

These dirty rice stuffed peppers are a perfect comfort meal. You can’t beat a Louisiana dirty rice stuffed into sweet bell peppers. I added some Monterrey and Pepper Jack cheeses for added flavor. This is an amazingly delicious twist on a traditional stuffed pepper recipe.
There are a million different ways you can stuff a bell pepper. In the South, especially in Louisiana, we use rice in so many dishes. My husband, Allen, actually grows rice most every year. These dirty rice stuffed peppers with cheese are so delicious. Don’t let the long list of ingredients scare you. They are worth it.
Equipment You’ll Need
For this recipe, you’ll need a casserole dish, a skillet and something to cook your rice in. I used a rice cooker, because they are just easy. I also have so much cast iron. I love them. I feel like they are my babies. I take such good care of them. This Staub skillet is my favorite.
Ingredients You’ll Need
Bell Peppers for Stuffing:
I used 9 for this recipe. You can use any colors.
Rice:
I used a cup of rice.
Beef Broth:
You’ll need four cups of beef broth for several different parts of this recipe.
Ground Beef and Ground Sausage:
I used a one-to-one ratio of ground beef and ground sausage. Be sure to drain off the grease after browning.
Holy Trinity:
The holy trinity of Louisiana cooking. It’s bell pepper, onion and celery. It goes it most every dish.
Cheese:
For cheese, you’ll need about two cups of shredded Monterrey Jack and about 6-9 slices of Pepper Jack. You’ll want a slice for every pepper.
How to Make These Dirty Rice Stuffed Peppers
step one:
Preheat your oven to 350 degrees. In a pot with a lid, add in a cup of rice with two cups of beef broth. Boil, cover, then turn to low until rice is fully cooked.
step two:
In a separate skillet, add your sausage and ground beef. Brown until fully cooked then drain off the grease. Add in your chopped bell pepper, celery, and onion and your seasonings. Sauté until vegetables are tender.
step three:
Once your rice is cooked, fold your cooked rice into the meat skillet. Add in another cup of beef broth and then cover. Cook for about 10 minutes until the rice and meat come together.
step four:
Lay each bell pepper on its side in a casserole dish and slice the top 1/4 off. Remove the insides and stuff each one half full with the dirty rice. Then, add in some of the shredded Monterrey jack cheese then fill the tops with more dirty rice. Add another cup of beef broth to the base of the casserole dish. Bake for about 30 minutes.
step five:
Remove the pan from the oven and add a slice of Pepper Jack over each pepper. Place back in the oven for about 10 minutes or until the cheese is melted and bubbly. Serve and enjoy!

- 1 cup Rice

- 1/2 Yellow Onion, Chopped
- 1 Celery Stick, Chopped
- 2 cups Shredded Monterrey Jack Cheese
- 6-8 slices Pepper Jack Cheese
Seasonings
- 1 tsp Poultry Seasonings
- dash Salt
- 1/2 tsp Pepper
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1 tsp Italian Seasonings
Instructions
