Easy Crockpot Meatloaf

I love this easy crockpot meatloaf. This is nothing more than a traditional meatloaf recipe slow cooked all. You’ll prepare the meatloaf just as you normally would, then line several sheets of foil in your slow cooker, place the loaf inside and slow cook on loaf for up to 6 hours. This recipe comes out so tender, juicy and delicious.
If y’all have been reading any of my recipes beforehand, you’ll know that I love trying things out in the crockpot. It’s just easy for me to throw things in there, forget about it and have dinner ready as soon as I need it.
This meatloaf in crockpot is spot on. It comes out super juice like a normal meatloaf would. I now love this recipe. Plus, the cleanup for it is such a breeze.
Equipment You’ll Need
You’ll need a large crockpot for the main pieces of equipment for this meatloaf. You’ll also need a couple of mixing bowls, one for the meatloaf itself and one for the glaze. You’ll also need some foil, a knife to chop your onion and maybe a spatula.
Ingredients You’ll Need
Ground Beef:
You’ll need two pounds of a leaner ground beef. You can use a chuck, but it may be a little greasy.
Breadcrumbs:
I used a mix of panko and Italian breadcrumbs. I used three-quarters of a cup each.
Onion:
I used half of a small yellow onion chopped up. You’ll want the pieces to be small. You don’t want to bite into a big piece of onion in your meatloaf.
Ketchup:
You’ll need a few tablespoons of ketchup to go in your meatloaf and you’ll need about 3/4 of a cup for your glaze topping.
Worcestershire Sauce:
You’ll need a few tablespoons. This add great flavor to the meatloaf.
Eggs:
You’ll need two large eggs. These are the binders for your meatloaf.
Seasonings:
As for seasonings, you’ll need salt, pepper, garlic powder and Italian seasonings.
Brown Sugar:
You’ll need a half cup of brown sugar for your glaze.
Apple Cider Vinegar:
A few tablespoons for your apple cider vinegar for your glaze.
How to Make This Easy Crockpot Meatloaf
step one:
Take a piece of foil and roll it into a flat ball and place it at the bottom of the crockpot. Layer two sheets each of foil sideways and longways in the crockpot over the ball and curl the sides over the edges. This will create a semi-elevated base for the meatloaf to sit in.
step two:
In a large bowl, combine all the ingredients for the meatloaf. You may want to use your hands to really mix it together. Shape it into a log or loaf shape and set it in the crockpot.
step three:
In a small bowl, combine the ingredients to the glaze then pour over the top of the meatloaf. Cover with the lid and cook on low for 4-6 hours.
step four:
When the time is up, remove the lid. The ball of foil at the bottom should have allowed for majority of the grease to run and collect at the bottom of the crockpot. Lift up the foil to remove the meatloaf or use a large spatula. Cut into slices. Serve and enjoy!

- 1/2 cup Brown Sugar
Instructions

Notes
internal temperature:
Make sure that the internal temperature is at least 160 degrees. However, it should be well above that after 4-6 hours.Before you go…
