Easy Hashbrown Casserole
This easy hashbrown casserole is a perfect comfort side dish. A similar rendition of my Granny’s “funeral potatoes,” this dish is so cheesy and delicious. All it consists of is a bag of frozen hashbrowns, sour cream, shredded cheese, cream of chicken, some bacon bits and seasonings. Can’t beat it. This recipe is like “church potluck” good. See how I made this dish in only two main steps.
Equipment You Will Need
The only main equipment that you’ll need is a large mixing bowl, a spoon or spatula and a 9×13 casserole dish. I’ve linked some of my favorites below. I love the Pyrex mixing bowls. They come with a lid, so it makes storing or saving for later so easy. I also have the ceramic Staub and Le Creuset baking dishes. However, you can always use glass or even disposable if you’re taking this dish somewhere.
Ingredients You Will Need
Frozen Hashbrowns:
I used a bag of frozen hashbrowns from the freezer section of Wal-Mart. I used 26 ounces.
Sour Cream:
I honestly used the whole pint. Just dump the whole thing in there. It creates a perfect base in this recipe.
Cream of Chicken Soup:
Adds a little more flavor and creaminess.
Shredded Colby Jack Cheese:
I always use Colby Jack. I just like the flavor combo. You could use Cheddar or whatever shredded cheese you have or like.
Bacon Bits:
I used just a bag of storebought bacon bits. Not the hard, crunchy kind. Like the real pieces of bacon. Much easier than taking the time to fry bacon and crumble it up. However, if you wanna do that, that’s fine too!
Cajun Seasoning:
I’m from Louisiana. I put it on everything.
Chives:
I topped the dish once finished with some chopped chives. I felt like it added a little bit of flavor, and it just gave it more of that loaded baked potato feel. However, these are totally optional. If you can’t find true chives, just use green onions.
Step by Step How to Make This Easy Hashbrown Casserole
Step 1
Preheat your oven 350 degrees. In a large mixing bowl, add all of your ingredients; only adding half of the bag of cheese. Save the other half for later. Mix your ingredients entirely. Your hashbrowns will still be a little stiff and frozen.
Step 2
Transfer your bowl of mixed ingredients to a greased 9×13 casserole dish. Top the casserole with the remainder of the bag of cheese. Cover with foil and bake for 45-55 or until bubbly. Once finished, top with additional cheese, chopped chives or more bacon bits. Serve warm and enjoy!

- 1/2 tbsp Cajun Seasoning
- Chives
