Feta and Zucchini Fritters

This feta and zucchini fritters recipe. So good and perfect for summertime. These are kind of like a hush puppy, but way better. You’ll just grate a couple of zucchinis and mix with feta cheese and a sweet batter made from cornmeal and flour. Fry for a few minutes and that’s it. These are a perfect bite for any occasion.
These are such easy zucchini fritters to make. They are great for an appetizer. Like I said before, these are kind of like hush puppies. However, the zucchini adds great flavor, and the cheese makes them rich and chewier. I added a dip sauce with them. You really can’t beat this simple recipe.
Equipment You’ll Need
As for equipment, you’ll need a large mixing bowl and something to fry in. If you already have a fryer, great! However, I just added about a quart of oil to a large Dutch oven. You’ll also need a cheese grater and I found that a cookie scoop works perfect. You just drop them in the oil directly from the scoop. Super easy. Lasty, I used some metal tongs to flip and remove my fritters from the oil.
Ingredients You’ll Need
Zucchini Squash:
I used two zucchini squash. They were smaller in size.
Feta Cheese:
I think I used about 3/4 of a cup of feta cheese.
Flour:
You’ll need a cup of flour.
Cornmeal:
You’ll also need a cup of cornmeal.
Seasonings:
For seasonings, you’ll need some sugar, salt and pepper.
Eggs:
You’ll need to large eggs.
Milk:
You’ll also need about a quarter of a cup of milk.
How to Make This Feta and Zucchini Fritters Recipe
Step one:
Heat oil in a large Dutch oven or a fryer to 325-350 degrees. Grate zucchini with a cheese grater. You’ll want about a cup and a half grated. Add the rest of the ingredients to a large mixing bowl and stir well.
Step two:
Using a cookie scoop or a spoon, dollop balls of batter into the fryer. I fry about 4 at a time. Roate them with metal tongs. Fry for about 3-4 minutes each until they are nice and golden brown. Remove from grease and place on a paper towel lined plate. Serve with favorite dipping sauce and enjoy!
