Loaded Brisket Mac and Cheese

Loaded brisket mac and cheese. Mhmmm. Literally the most comfortable of comfort food. You’ll start with brisket. You can buy an already cooked brisket to use or slow cook one like I did. Boil your pasta. Make a homemade Velveeta cheese sauce then mix it all together. Top with breadcrumbs, chopped tomatoes, red and green onions and butter. Bake until the top is crispy. So delicious. It’s a new favorite around here…
I didn’t really realize this, but I guess I make dishes with brisket a lot. Predominately slow cooker brisket. Here’s my brisket sandwiches and my brisket tacos. However, this a new one. Who doesn’t love mac and cheese? Especially…Velveeta mac and cheese? Ok, now add brisket to it? So delicious. I am predominantly cooking for a bunch of hungry boys and men and there was none of this brisket mac and cheese was left!
Equipment You’ll Need
You’ll need a large pot, a skillet or something to bake in for the mac and cheese with brisket. If you decided to cook your own brisket, you’ll need a large crockpot.
Ingredients You’ll Need
Brisket:
You’ll need about two and a half cups worth of brisket. You can definitely buy some precooked from a BBQ place or you can make it. To make it, you’ll need a small brisket and about a cup of BBQ sauce and a cup of beef broth.
Mac and Cheese:
For the mac and cheese, I used a box of cellentani pasta, butter, flour, milk heavy cream and Velveeta cheese.
Toppings:
I topped this with some panko breadcrumbs, melted butter, Pico de Gallo and green onions.
How to Make This Loaded Brisket Mac and Cheese
step one:
If you make the brisket instead of buying it precooked, add all of the brisket ingredients to a large crockpot. Place the fat side of the brisket up. Cook on high for at least 6 hours. Remove from cooker and slice shred.
step two:
Preheat oven to 375 degrees. Boil pasta to instruction and set aside. In a large pot, add a half stick of butter on low heat. Melt then sift in flour. Stir until a paste forms. Add in milk and heavy cream. Stir will until paste is mixed in then add Velveeta, sugar and a dash of salt and pepper.
step three:
Once cheese sauce is made, fold in pasta and about two and a half cups of chopped brisket meat. Fold all together then add it to a skillet or baking dish. Top with parmesan cheese, Pico de Gallo, green onions and panko breadcrumbs. Pour melted butter over the top.
step four:
Bake for about 20 to 25 minutes until the panko is browned. Top with more Pico de Gallo and green onions. Serve and enjoy!

Brisket
- 2-3 lb Raw Brisket or Precooked Brisket
- 1 cup Favorite BBQ Sauce
- 1 cup Beef Broth
- Salt & Pepper
Mac and Cheese
- 16 oz Cellentani Pasta
- 1/4 cup Butter
- 1/4 cup Flour
- 1 1/2 cup Milk
- 1 cup Heavy Cream
- 16 oz Velveeta Cheese
- 1 tbsp Sugar
- Salt and Pepper

- 1 cup Shredded Parmesan Cheese
- 1 cup Panko Breadcrumbs
- 3 tbsp Melted Butter
- Storebought Pico de Gallo
- Chopped Green Onions
