This mandarin orange, green Asian salad is such an easy salad to throw together. It’s a sweet salad of a mix of greens with mandarin oranges, avocado, edamame, almonds and chow mein noodles. I topped it with a storebought champagne salad dressing, and it was perfect. This Asian salad recipe is the perfect mix of sweet and savory and soft and crunchy. Make it a meal or just serve it as a side.
I really love this Asian salad recipe. It’s just easy to throw together and takes less than 5 minutes to make. The flavor is so sweet and tangy. The mandarin oranges add the perfect amount of sweet and tangy. The salad also has a mix of crunchy and soft, which I love. If you’re looking for a salad that’s something out of the box yet super simple…this is it.
Equipment You’ll Need
All you’ll need is a large salad bowl and some salad tongs. Maybe some measuring cups to measure. I am so bad about just eyeballing things.
Ingredients You’ll Need
Spring Mix:
I used three cups of a spring mix.
Mandarin Oranges:
I used a 15 ounce can of mandarin oranges. I drained them then added them to the salad.
Edamame:
You can use a half cup of cooked edamame beans. Mine were frozen and I heated them up before adding them in.
Chow Mein Noodles:
These come in a little tin can. They are the little squiggly Asian noodles for your salad. They are essentially the crouton of this dish.
Sliced Almonds:
You’ll need a quarter cup of sliced almonds.
Avocado:
I sliced and added a whole avocado to the dressing.
Champagne Salad Dressing:
The dressing I bought was made by the brand Gerards. It’s a champagne vinaigrette dressing. It’s a dressing made with champagne vinegar.
