I love these no bake pumpkin spice oatmeal cookies. They are just a fall take on an original recipe. Here, I replace cocoa powder with some pumpkin pie spice, along with the traditional ingredients peanut butter and oats. These are super easy to make, and perfect for any autumn occasion.
These no bake cookies are perfect for this time of year. I normally don’t get super into fall baking, but this year I have been. However, these are the best of both worlds. Desserts, but yet not really having to put forth a lot of effort.

Are these like traditional no bake oatmeal cookies?
Yes. This is a recipe that I had for no baked oatmeal cookies. Instead of using cocoa powder, I substituted it for pumpkin pie spice.
Where can I find pumpkin pie spice? Can I make my own?
You can find pumpkin pie spice at in the seasonings section of the grocery store. You can also make it. Pumpkin spice is cinnamon, nutmeg, ground cloves and ginger.
Can I substitute anything for the peanut butter?
I know that peanut allergies are pretty common. You can substitute the peanut butter for almond butter. However, I will say that I have not ever done this, so I don’t know what the flavor would be like.
Equipment You’ll Need:
For this recipe, you’ll need a large pot. If you have a non-stick pot, that will work the best. You’ll also need some parchment or wax paper, some measuring cups and spoons, a spatula, and a cookie scoop. If you don’t have a cookie scoop, you can use a tablespoon.
Ingredients You’ll Need:
Butter:
You’ll need one stick of unsalted butter.
Sugar:
For the sugar, you’ll need a cup of regular granulated sugar and a cup of brown sugar.
Milk:
I added a half of a cup of milk. It doesn’t matter what type of milk that you use.
Pumpkin Pie Spice:
You’ll need 4 tablespoons of pumpkin pie spice.
Oats:
You’ll need three cups of oats. I just used oatmeal.
Peanut Butter:
You’ll need one cup of creamy peanut butter.
Maple Extract:
I love adding in the maple extract. I feel like it adds an extra bit of fall into the cookies. You can omit this or substitute it with vanilla.
Cookie Variations:
There are several different ways to make these. You could add in any type of nuts. I think these would be delicious with walnuts or pecans.
How to store these cookies:
I would store these in a level, airtight container. If these cookies aren’t stored level, they could become smushed.
How to Make These No Bake Pumpkin Spice Oatmeal Cookies
- Melt butter in a large pot. Add in regular and brown sugar. Add milk. Stir well then mix in pumpkin pie spice. Let it bubble for several minutes then remove from heat.
- Once removed from heat, stir in oats. Next, mix in peanut butter and maple extract. Once it’s all fully mixed together, spoon drops on to parchment paper. Let sit for at least 30 minutes to become firm. Enjoy!
