So, What’s the Deal with These Cucumber and Cream Cheese Tea Sandwiches?
They are perfect for a party
These little tea sandwiches are the best thing to serve at a girly party. Whether it’s a tea party or a bridal or baby shower, these are the top finger food for your next event.
They’re quick and easy
Once you have your mixture made up, these are so quick to assemble. They are also very simple to make ahead of time, too.
They are so delicious
Who knew these tiny, simple sandwiches would be so crave worthy. They are so good. The light and airiness of the cucumber and dill makes for the most perfect bite.
Equipment You’ll Need
The main thing that I used was my food processor. You’ll combine all the ingredients for the spread into the food processor and pulse them together. You’ll also need a veggie peeler to peel your cucumbers, and a VERY sharp chef’s knife to slice your cucumbers, crust, and sandwiches once assembled.
Ingredients You’ll Need
White Bread:
You can use any type of white bread that you would like. Use a sharp knife to cut the crust off of every side before assembling.
Cucumbers:
A lot of similar recipes call for English cucumbers, I used whatever ones I can find. You’ll peel the cucumbers and cut them into very thin slices. Slice them as thinly as you can, probably about 1/8 inch thick.
Cream Cheese Spread:
The cream cheese dill spread is a mixture of cream cheese, mayo, Greek yogurt, dill, chives, garlic, lemon and spices. It is so cool and creamy and makes for the best base for these tiny sandwiches.
Old-Fashioned Cucumber Dill Tea Sandwiches
Equipment
- Food Processor
- Vegetable Peeler
- Sharp Chefs Knife
- Spoon or Spreader
- Cutting Board
Ingredients
- 1 loaf White Bread
- 2 Large Cucumbers
Cream Cheese Spread
- 1 8 oz Block of Cream Cheese
- 1/4 cup Greek Yogurt
- 2 tbsp Mayonnaise
- 1 1/2 tbsp Dried Dill
- 1 tbsp Dried Chives
- 1 tbsp Garlic Powder
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Sugar
- 1 tbsp Lemon Juice
Instructions
- Peel and slice your cucumbers into thin slices, around 1/8" thick. Lay them flat on a paper towel and sprinkle a tiny amount of salt of them and then lay another paper towel on top of them. Let the towel soak up as much moisture as possible for around 10 minutes. This will prevent your sandwiches from becoming too soggy, too quickly.
- While your cucumbers are laying out, place all of your ingredients for the cream cheese spread to a large food processor. Pulse and mix until it's totally mixed together. Then start cutting the crust off of at least 8-10 slices of white bread.
- To assemble the sandwiches, take a teaspoon and spread it on the interior of two pieces of bread. This will prevent to cucumbers from making your bread soggy. Layer one piece with a layer of the sliced cucumbers, then place the other piece on top. With your very sharp knife, slice it in half, diagonal or in quarters. Serve within 1-2 hours for best results. Enjoy!
