Simple Chopped Italian Salad

I love this simple chopped Italian salad. I’m always looking for different ways to make a salad, especially in the summer months. This is no complicated or secret to making this one. Just chop up all the veggies and add them over a bed of spring mixed greens and dress with your favorite Italian dressing.
I love this combination of toppings for this salad. It can go with anything as a side course. You could also easily add some protein to eat it alone as a full meal.
Equipment You’ll Need
The only equipment you’ll need for this recipe is a large mixing bowl and some salad spoons. You’ll also probably need a cutting board and sharp knife to chop everything up with. Otherwise, I can’t think of anything else that is needed.
Ingredients You’ll Need
Spring Mix:
You’ll need about 3 cups of spring mix greens. This is lettuce, spinach, arugula. Whatever you have.
Cherry Tomatoes:
You’ll need a handful of cherry tomatoes.
Black Olives:
I used a tablespoon or so of chopped black olives.
Green Olives with Pimentos:
The same as the black olives…I used about a tablespoon. You can use however much you’d like.
Marinated Artichokes:
I love marinated artichokes.
Heart of Palm:
Ok. I really love heart of palm. Kinda has the same flavor as an artichoke. So good and add extra flavor and texture to the salad.
Brown Mushrooms:
You can add a few raw brown mushrooms.
Red Onion:
I added a few pieces of sliced red onion.
Parmesan Cheese:
You’ll need shredded parmesan cheese.
Italian Dressing:
Italian dressing of your choice! You could also use oil and vinegar.
How to Make This Chopped Italian Salad
step one:
Chop all the veggies listed. Use however much of each you’d like. No particular amount. Add them over a bed of spring mix greens in a large salad bowl.
step two:
Add cheese and salad dressing. Serve and enjoy!
