I really like this crockpot shepherds pie. It’s a hearty meal made simple. You start with a base layer of a rich ground beef and vegetable mixture. Top it off with creamy mashed potatoes then melted butter. Let this cook to come together for the easiest dinner recipe.
Yall know that I love a simple dinner. I’m always trying to simplify recipes. This one to me is so easy and delicious. My brother-in-law Joseph is always requesting shepherd’s pie. So, of course, I had to make a crockpot shepherd’s pie.

Can I make this ahead?
Yes! This is a great dinner to make head. I would cook the ground beef and assemble it all in the crockpot, without adding the melted butter. Store it in the refrigerator in the crockpot bowl. When you’re ready to cook, add it to the crockpot and cook on high for a few hours until it’s warmed. You can also cook the crockpot shepherds pie on low but be mindful it will take longer heat up.
Variations for this recipe:
Potatoes:
You can use instant or homemade mashed potatoes. You can also add cheese or chives or any other flavors you’d like. This is a simple recipe with no rules.
meat:
The fat percentage really doesn’t matter in your ground beef. However, I recommend getting as much fat off once cooked as possible. You can also substitute the ground beef for venison, turkey chicken or pork.
Vegetables:
You can use whatever vegetables of your choice. You can also use frozen, however, be mindful it may take longer to cook.
How to store leftovers?
These leftovers will keep in the refrigerator for 3 to 5 days. You can reheat individual servings in the microwave or as a whole back in the crockpot. I would recommend keeping the dish in the crockpot bowl in the refrigerator.
Equipment You’ll Need
For this recipe, all you need is a skillet and a large crockpot. The crockpot that I use is 7 quarts. This is plenty big enough for this recipe. Other miscellaneous items you may need are a knife, measuring spoons and a spoon or spatula.
Ingredients You’ll Need
Ground Beef:
You’ll need two pounds of ground beef. I brown them in a skillet, wash all of the fat off in a colander then add it back to the skillet. I think it’s important to wash off the fast, so that it doesn’t pool at the top of your dish.
Minced Garlic:
You’ll need a tablespoon of minced garlic.
Onion:
You’ll need one yellow onion. You’ll want to chop it then add it into the skillet.
Mixed Vegetables:
You’ll need two cans of mixed vegetables. I like using Veg-all. You’ll drain the vegetables before adding them in.
Tomato Paste:
You’ll need one small can of tomato paste.
Beef Consommé:
I like using a can of beef consommé. If you can’t find any, you can substitute for beef broth.
Mashed Potatoes:
You can use mashed potatoes of your choice. You can use instant, homemade, whatever your preference is. You’ll need 6 to 8 cups.
Melted Butter:
You’ll need a half stick of melted butter.
Seasonings:
As for seasonings, you’ll need salt, pepper, sugar, garlic powder, onion powder, and Italian seasonings. I topped the dish with fresh chopped parsley, but that is optional.
How to Make This Simple Crockpot Shepherds Pie
- In a skillet, brown two pound of ground beef. After is it fully cooked, drain off the fat. Preferably, wash as much fat as possible off of the ground been in a colander. Return beef to the skillet.
- Add in your chopped onion and garlic and sauté for several minutes until fragrant. Add the contents to a large crockpot. Add in your mixed vegetables, beef consommé, tomato paste, and all of your seasonings. Stir well.
- Add your mashed potatoes over the top. Spread to an even layer over your ground beef base mixture. Top with melted butter and fresh parsley. Cook on low for 2-3 hours until hot. Serve and enjoy!

- 1 10.5 oz can Beef Consomme
- 6-8 cups Mashed Potatoes
- 4 tbsp Melted Butter
Seasonings
- 1 tbsp Italian Seasonings
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Sugar
- t tsp Garlic Powder
- 1 tsp Onion Powder
- Fresh Parsley (optional for garnish)
