Sweet and Sour Wild Roasted Duck

This sweet and sour wild roasted duck is a great recipe for fall and winter. If you are a duck hunter, you need to keep reading. This is simple recipe that can be made with any type of duck. It’s a simple slow roasted duck recipe, then once the ducks finish roasting, you’ll brush it with this amazingly delicious homemade sweet and sour sauce and crank the oven up to let the exterior crisp. I roasted them on top of apples and greens, which then later marinade and render in all the delicious duck fat. If you hunt and cook wild duck, you’ll definitely want to try this recipe.
Live in the north east corner of Louisiana. Doug hunting is always huge around here. All of them guys in my life, so graciously been keeping me stocked with all of the wild game. This particular dog that I recently made was teal. However, this can be made with any type of duck.
How do you get duck or wild duck?
These ducks that are locally hunted.
What type of duck can you use for this recipe?
These ducks in particular are teal. However, you can use any type of dog for this recipe. It’s the same process.
Bake them on a bed of apples and greens?
This is a little more flavor in my opinion. These ingredients can be optional. However, they taste They’ve roasted all the duck fat.
What internal temperature do you need to cook duck to?
There are ways of eating duck in different temperature and rareness. I’m just kind of scared to do that. 165° internally.
Do I have to have a smoker?
You don’t. You can slow roast these in the oven at 250 the same way you doing a smoker? 2 1/2 hours. Once the duck is At least 150° internally cranked your oven up to 400 for to finish cooking.
Do I have to do the brine?
You don’t. However, it will make a huge difference in the flavor and juiciness of the birds.
How do you clean a wild duck?
I do not know! They are always delivered to me straight from the field cleaned. However, sometimes I have to go through and finish plucking off some hairs and feathers.
Equipment You’ll Need
As far as equipment goes, I used the Traeger smoker. However, the same recipe can be made in the oven. You may not have as much of the smoke flavor. You also need a food thermometer if you have a thermometer that works while you’re cooking that’s even better. You also need a bowl and something to the ducks with. That’s really about it.
Ingredients You’ll Need
Ducks:
You’ll need several ducks. I specifically used teal for this recipe, but you can use any type of duck.
Collard Greens:
You technically don’t have to use these, but I felt like they add great flavor to the skillet. Plus, once they cook in the duck fat and apples, they taste so good.
Apples and Onion:
These both just simply add flavor with the skillet. Again, if you don’t include these, it won’t be a game changer.
Brine:
For the brine, you’ll need water, salt, sugar, peppercorns and apple cider vinegar. You don’t have to brine your ducks, but they come out very juicy and flavorful.
Homemade Sweet and Sour Sauce:
You’ll need Dijon mustard, apple cider vinegar, honey and sweet chili sauce. This sauce is not optional! It is so delicious and makes this recipe. You’ll need to divide it in half and then use the remainder as a dipping sauce.
How to Make These Wild Roasted Ducks with Homemade Sweet and Sour Sauce
step one:
Add your ducks to a large bowl. Add all the ingredients of the brine to the bowl. Make sure they are fully submerged. They them soak in the brine in the fridge for at least 4 hours.
step two:
Once time is up, preheat your oven or your smoker to 250 degrees. In a large cast iron skillet, add your greens then layer your sliced apples on top of that. Then, remove the ducks from the brine, pat them dry, then place them on top of the greens and apples. I arranged mine in a circle.
step three:
Add some fresh rosemary between the birds. First, salt them very well, then season them with pepper, onion and garlic powder. Place them in the oven or smoker for at least two hours, periodically checking their internal temperature.
step four:
While they are roasting, mix together all of the ingredients to the sauce. Divide it into two different bowls.
step five:
Once the birds have reached 155 degrees internally, remove them from your oven or smoker and baste them generously with half of the sauce. Place back in your oven or smoker at 400 degrees for about 20 minutes or until birds are over 165 degrees internally. Remove and serve with the remaining half of the sweet and sour sauce. Enjoy!

- 12 oz Frozen Collard Greens
- 2 Apples, sliced
- 1 Red Onion, sliced
- Salt

- Garlic Powder
- Pepper
- 2-3 stalks Fresh Rosemary

- 4-6 cups Water
- 1/4 cup Salt
- 1/2 cup Brown Sugar
- Peppercorns
- 1/2 cup Apple Cider Vinegar
Sweet and Sour Sauce
- 2 tbsp Dijon Mustard
