Black Bean and Corn Salsa
I love this black bean and corn salsa recipe. It’s so good to eat with chips and salsa as an appetizer or as a topping for tacos or salads. This is really just like a Texas cowboy caviar. The possibilities are endless. Also, it’s perfect to whip up in no time. It’s a perfect blend of beans, corn, onion, tomatoes all mixed together with southwest spices, lime and cilantro. Typically, Texas Caviar or Cowboy Caviar is a light, summer salad consisting of mainly beans, and southwest style veggies. They may or may not have a dressing or seasoning mixed within them.

You typically would serve Cowboy Caviar with tortilla chips and eat it like a dip. However, it goes great on tacos and salads too!
How long does texas caviar last?
In the refrigerator, I would keep cowboy caviar stored in an airtight container. It should last around 3-4 days.
Equipment You’ll Need
When preparing to make this cowboy caviar recipe, you won’t have to pull out too many items to make it with. Mainly you’ll need a can opener, a chef’s knife, cutting board, some measuring cups, and a bowl. It’s super simple and easy, and hardly anything to clean up at the end.
Ingredients You’ll Need
The possibilities are endless when making this recipe. However, I personally like to cheat and take as many shortcuts as possible. I use mostly canned items for this recipe. You could use fresh or dried beans, but it’ll just take more time and a lot more work without changing the flavor. The rest, I just chopped up really quick.
Beans:
I used a mixture of black-eyed peas and black beans. I used two 15-ounce cans.
Corn:
You’ll need one 15-ounce can of whole kernel corn.
Bell Pepper:
One green bell pepper.
Onion:
You’ll need 1/2 of a red onion.
Tomatoes:
I like using the roma tomatoes. They are firmer with less juice and just hold up better in this recipe.
Seasonings:
I used a taco seasoning blend. I used salt, pepper, garlic powder, onion powder, chili powder, and cumin.
Lime Juice:
The lime juice freshens up the recipe and helps bind all the seasonings to the salad. Don’t skip using the lime juice!
Fresh Cilantro:
I love cilantro. Again, the fresh chopped cilantro adds such a freshness to the recipe!
How to Make This Texas Black Bean and Corn Salsa
Step One
Open and drain the liquid off your cans of beans and corn. Add all three of them to a large bowl.

Chop your green bell pepper, half of a red onion, and tomatoes. You’ll want them in little diced pieces. Add them to the bowl as well. In a small bowl, mix together all of your spices and seasonings then add them to the bowl.

Add in your lime juice and cilantro then toss the salad well. Serve with tortilla chips. Enjoy!
