White Chocolate Cranberry Cookies

These white chocolate cranberry cookies are so perfect and delicious. These are made just like a traditional chocolate chip cookie, but they are full of white chocolate chips and dried cranberries. These are so chewy and delicious and perfect for any occasion.
I’ve been in this mood lately that I want to have cookies baked at all times at my house. Why? I’m really not that sure. However, these cranberry white chocolate cookies are just so simple and delicious. The actual cookie itself is made up just like a typical chocolate chip would be, except that these have white chocolate and dried cranberries. Yum. Different yet super delicious.
Equipment You’ll Need
To make this white chocolate cranberry cookies recipe, you’ll really need a stand mixer with the paddle attachment to mix everything up. I guess that you could technically do it by hand but that may actually be super hard. You’ll also need some measuring cups, baking sheets, parchment paper, and a cookie scoop.
Ingredients You’ll Need
Butter:
You’ll need one cup of butter aka two sticks. I used unsalted butter.
Sugar:
I used brown sugar and granulated sugar.
Eggs:
You’ll need two large eggs.
Vanilla Extract:
I added in one teaspoon of vanilla extract.
Baking Soda:
You’ll need one teaspoon of baking soda. This will structurally a better cookie.
Flour:
You’ll need two cups of all-purpose flour.
White Chocolate Chips:
I used a cup and a half of white chocolate chips.
Dried Cranberries
I used one cup of dried cranberries.
How to Make These White Chocolate Cranberry Cookies
Step one:
Preheat your oven to 350 degrees. Add your room temperature butter and sugars to you stand mixer. Mix them for a few minutes with the paddle attachment until they are creamed together.
Step two:
Add in your eggs one at a time. You’ll then add your vanilla and baking soda. Next, add in your flour once cup at a time. You’ll want to level off your flour and make sure you’re adding exactly two cups. Mix well.
Step three:
Remove the bowl from the and scrape the sides with a spatula. Fold in the white chocolate chips and dried cranberries. Use a cookie scoop or a teaspoon to scoop out small balls. Place then on a parchment paper lined cookie sheet at least 2 inches apart.
Step four:
Bake for around 8 to 10 minutes until the cookies are golden. Let cool. Serve and enjoy!

Baking:
If you’re using one cookie sheet, make sure to let it cool before adding another batch to it.If you want round cookies:
While the cookies are still hot, take a large mouth cup or a cookie cutter, put it around the cookie and move it in circular motion. This will round out the edges of the cookies.Wait…
