Bacon and Caramelized Onion Hummus and Pita Bread

This bacon and caramelized onion hummus and pita bread appetizer. Yum. A different twist on your typical hummus flavors. It's a simple, homemade hummus topped with bacon, sweet, caramelized onion, and a drizzle of balsamic vinegar. This dip is so good I could make a meal out of it.

Equipment

Ingredients
  

  • 1/2 lb Bacon
  • 1 Yellon Onion
  • 1 tbsp Olive Oil
  • 1 tsp Brown Sugar
Hummus
  • 1 can Chickpeas
  • 1/2 cup Tahini
  • 2 tbsp Olive Oil
  • 2 tbsp Minced Garlic
  • 3 tbsp Lemon Juice
  • 2 tsp Cumin
  • 1 tsp Salt
  • 3-4 tbsp Water

Instructions
 

  • Drain the can of chickpeas and add them to the food processor or blender. Add in the tahini, lemon juice, olive oil, garlic, cumin and salt. Blend for several minutes.
  • Add water one tablespoon at a time until it's thinned to a proper consistency. It will be thick and grainy before adding the water. Empty and add to a plate or platter.
  • Slice onion thinly. Add to a skillet on medium heat with olive oil. Sauté until golden brown then add brown sugar. Sauté for a few more minutes then remove from skillet. Fry bacon until cooked then remove from pan.
  • Add onions and bacon to the top of the hummus. Sprinkle the top with a little more brown sugar then drizzle with balsamic vinegar. Serve with pita bread and enjoy!
