Baked Summer Sausage Cheese Dip

This baked summer sausage cheese dip. Mhmm. Perfect cheesy skillet appetizer. Kind of the same concept of a dried beef dip or appetizer, you’ll take a summer sausage roll, chop it or grate it up, mix with some cheddar, cream cheese, pimentos and spices. Bake and serve. This is the most savory dip that is so good and perfect for any occasion.
Are there ever too many hot dip recipes out there? I mean, seriously… I really love this one. It’s so much like a dried beef dip just not quite as salty. That same savory, meaty flavor. I love pairing it with cream cheese, pimentos and sugar. It’s like the best of sweet and savory. You could use chips or crackers but I think the crostini toasts really hold up well for this dip!
Equipment You’ll Need
I used a 6 inch cast iron skillet. I always think it’s perfect for dip recipes. Then, you’ll also need a mixing bowl. I love these retro ones Walmart has out.
Ingredients You’ll Need
Summer Sausage:
You’ll need a roll of summer sausage. I used about half of a 16-ounce roll.
Cream Cheese:
I used a very softened block of cream cheese.
Sharp Cheddar Cheese:
You’ll need about two cups of sharp shredded cheddar cheese.
Pimentos:
I put pimentos in everything, I swear. I used about a tablespoon of pimentos. These are the kind you get in a tiny jar.
Mayonnaise:
I used two tablespoons.
Sugar:
The sugar just sweetens it and brings it all together.
How to Make This Baked Summer Sausage Cheese Dip Recipe
Step One:
Preheat oven to 350 degrees. Finely chop or grate the summer sausage with a cheese grater.
Step two:
In a bowl, combine all ingredients. Add the mixture to your skillet or dish. Bake around 25 minutes until bubbly. Serve with crackers or crostini toasts. Enjoy!

- 8 oz Summer Sausage
- 8 oz Block of Cream Cheese, Softened
- 2 cups Shredded Sharp Cheddar Cheese
- 1 tbsp Pimentos
- 2 tbsp Mayonnaise
- 1 tbsp Sugar
