Berry Patriotic Ice Cream Pie
Looking for some patriotic Memorial Day or 4th of July desserts? This ice cream pie with berries is perfect for your holiday cookout. All the recipe consists of is a store-bought crust, ice cream, cream cheese, sugar and berries. Top it off with a little whipped cream and sprinkles to make it festive. Read along to see how to make one of my favorite red white and blue desserts for Memorial Day or July 4th.

It’s Easy
This pie is so easy to make. I bought a premade crust and just added my ingredients for my berry layers one at a time to my food processor. It’s simple and doesn’t mess up the entire kitchen.
It’s no bake
I love no bake. I feel like I was looking for no bake red white and blue desserts during the summertime. The only thing about this recipe is that I let the first layer set for about 30 minutes before adding the next, so it does take a little time!
It’s Festive
This pie is so festive for summer holidays. Also, it’s super cute and fun to serve! Not to mention, light and tasty!
Equipment You’ll Need
Basically, the only piece of equipment I needed for this recipe was my food processor. I literally use my food processor for everything. So much, that it’s earned a place on my counter. You’ll also need a spatula spoon to help spread out the cream layers.
Ingredients You’ll Need
Pie Crust:
I used a 10-inch pie crust made out of crushed pecans. I felt like it really held up well and was perfect for this recipe. You could also use a graham cracker crust, or even make your own.
Vanilla Ice Cream:
I used a pint of vanilla ice cream and divided it in half for each berry layer.
Cream Cheese:
I split a block of cream cheese between each layer. This added a creaminess to each bite, and was so delicious.
Berries:
I used a cup of strawberries and a cup of blueberries for the berry layers.
Sugar:
I used half a cup of sugar for each layer. It will really help sweeten up the tartness from the fresh fruit.
Whipped Cream:
I made homemade whipped cream and put it in a pipping bag. It’s simple just a cup and a half of heavy cream and a cup of sugar beaten until stiff. However, you can always use canned whipped cream.
Patriotic Sprinkles:
I found these patriotic sprinkles at Wal-Mart, but I’m sure you can find them almost at any grocery store.
Step by Step How to Make This Berry Patriotic Ice Cream Pie
Step one
Take out your crust and set it on the counter. Place your strawberries, half a block of cream cheese, half of your ice cream pint and half a cup of sugar to your food processor. Beat until fully mixed. Add it to your pie crust then place in the freezer for at least 30 minutes to let set.
Step two
Remove the pie from the freezer and repeat the same process with the same ingredients, only with blueberries. Place it in the freezer for at least 2 hours so it will be firm. Remove and add whipped cream and sprinkles to the top. Serve and enjoy!

- 8 oz Block of Cream Cheese
- 1 cup Blue Berries
- 1 cup Strawberries

Notes
- I made homemade whipped cream for the topping. Simply add 1.5 cups of heavy cream and 1 cup of sugar to your food processor and beat until firm. Place it in a piping bag and add to the top or simple spread it on.
