Can I just use instant mashed potatoes?
I’m certainly not saying that you can’t However, they won’t be quite as rich.
Can I substitute milk for the heavy cream?
Yes, you can. I would maybe add a teaspoon of sugar just to get that sweetness that the cream gives.
Can I make these ahead of time?
This is just me…I would go ahead and boil my potatoes ahead of time and store them in the fridge until you’re ready to serve. Then, I would add them to a large pot, heat and add in cream and browned butter.
Equipment You’ll Need:
Alright. For this recipe, there are a few items that you’ll need to make these potatoes. You’ll start with a vegetable peeler and a chef’s knife. You’ll need to peel and dice your potatoes. Then, you’ll need a large pot to boil your potatoes. Next, I used a separate skillet or saucepot to make the brown butter. I like using one that has a light-colored bottom. If you have one, that’s the best option. If not, no worries. Lastly, you’ll need a potato masher or a hand mixer to create a creamy smooth texture.

Potatoes
I used 6 large Russet potatoes. These are the typical baking potatoes.
Heavy Cream
I used a cup and a half of heavy cream. This will give the potatoes a velvety texture and sweet flavor.
Butter
I used two sticks or 16 tablespoons of salted butter.
Minced Garlic
You’ll need about a tablespoon of minced garlic.
Fresh Herbs
You don’t have to add in the fresh herbs, but they complement the flavor so much in my opinion. I used thyme, rosemary and sage. You’ll leave all of these on the stem, so they are easy to remove from the brown butter.
Step by Step How to Make Brown Butter Mashed Potatoes
- Peel your potatoes and cut them into pieces. Place them in a large pot and cover with water. Bring to a boil. Boil for about 20 minutes or until potatoes are tender.
- Drain off the water, add heavy cream to the pot and mash with potato masher or hand mixer.
- In a separate skillet, melt your butter on low heat. Add in your herb bunch garlic. Your butter will start to foam. Let it foam for a few seconds then remove from heat. Once the foam subsides, the butter will be browned.
- Add the majority of the butter minus a few tablespoons to the mashed potatoes. Mix well and add to your bowl that will be used for serving. Drizzle the remainder of the butter over the top. Serve and enjoy!
