The weather has been a lot colder here in Louisiana, so all I’ve wanted to do is cook cozy meals and sit by my fireplace. This white chicken lasagna soup with spinach is so perfect for wintertime. I love anything creamy and alfredo-y. If you are more of an alfredo Italian person rather than a red sauce person, this rendition is definitely for you. Too, it’s just so simple. It’s basically a dump recipe. No chopping or cutting up anything. Just placing it all in the pot and letting it simmer down. So simple. Perfect for weeknights too.
Equipment You’ll Need
The main piece of equipment you’ll need for this recipe is a large pot. I love my Le Creuset. I know they are pricey, but they are super worth it. I use mine several nights a week. I like how it has the thick bottom, so things won’t scorch as easily. I really love it. However, I linked a lower priced option as well.
Ingredients You’ll Need
I like taking shortcuts in a lot of my recipes, and this one is no different. Just use a rotisserie chicken and a frozen bag of spinach for this easy lasagna soup. I use rotisserie chicken for so many of my recipes. It’s easy, and honestly the flavor is the best. You’ll also need some lasagna noodles. It doesn’t matter which kind. I know there are the kind you can put in the oven still hard or the kind you have to pre-cook. It won’t matter. The broth will cook them down. Then, you’ll obviously need some seasonings, butter, heavy cream, and parmesan cheese.
How to Make This White Lasagna Soup
Step one:
In a large pot, add in some butter and minced garlic. Let the garlic cook and become fragrant for several minutes then add in your shredded rotisserie chicken and spinach. Let them cook for several minutes.
Step two:
Next, add in your chicken broth, lasagna noodles and seasonings. Bring to a boil and reduce heat to low and cover. Let cook for at least 20 minutes or until noodles are fully cooked.
Step three:
Remove cover and add in heavy cream, a tablespoon of flour and parmesan cheese. Stir and let it simmer on low. If after several minutes it doesn’t thicken, slowly add in flour until desired thickness is reached.
Step four:
Serve with more parmesan cheese and a dollop of ricotta cheese on top. Enjoy this white lasagna soup!

- 1 tbsp Minced Garlic
- 12 Rotisserie Chicken
- 12 oz Bag of Chopped Frozen Spinach
- 4 cups Chicken Broth
- 5 Lasagna Noodles
- 2 tsp Salt
- 1 tbsp Pepper
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 1 cup Shredded Parmesan Cheese
- 1 cup Milk
- 1 cup Heavy Cream
- Flour (to thicken if needed)
Instructions
